Lahanosalata

Lahanosalata, or cabbage salad, is a simple, delicious, and healthy salad that is very popular in all of Greece, particularly in the Central Macedonian region.

Ingredients
  

  • 6 cup cabbage; shredded
  • 2 large carrots; grated
  • 1/3 red onion; cut finely
  • 1/2 cup pomegranate seeds (optional)
  • 1/2 cup walnuts; toasted (optional)
Dressing
  • 2 small lemons; juiced
  • 1/3 cup extra virgin olive oil
  • 1 tsp regular mustard
  • 1 tsp honey
  • salt and pepper

Method
 

  1. To make Lahanosalata: Cut the cabbage into thin strips. Cut the thin strips in half so they are easier to eat. Add the grated carrots, onion, pomegranate seeds, and toasted walnuts.
  2. Whisk the salad dressing ingredients in a bowl. Pour over the salad and mix. Serve with any meat or fish dish, and fresh bread. This salad can be stored in the refrigerator for up to three days.
