Watermelon and feta salad is refreshing, healthy, and delicious. It is a summertime favorite that takes only minutes to prepare.

Dressing
 ¼ cup extra virgin olive oil
 2 limes; juicedfeel free to use one more lime if your limes aren't very juicy
 ¾ tsp each salt and pepper
Salad
 10 cups seedless watermelon (cold)
 2 cups crumbled fetaI use a harder feta for this salad, as the creamier feta seems to dissolve too easily
 1 cup fresh mint leaves; choppedleave some of the smaller leaves whole for a nice presentation

To make watermelon and feta salad:

In a small bowl, whisk together olive oil, lime juice, salt, and pepper.

Chop the watermelon into one inch (2.5cm) chunks. Discard the rind.

To a large serving bowl, add the watermelon, dressing, and chopped mint.
Toss everything together gently.

Sprinkle with crumbled feta, and serve.

If not serving immediately, chill in the refrigerator until ready to eat.

This makes a perfect side salad for dishes such as keftedes or souvlakia, and is a great salad to bring to any type of summer barbeque.

Note: This salad should be made within an hour of eating for best results.

Feel free to experiment with adding other ingredients you may have on hand, such as cucumbers, chopped red onions, or olives.
