What is maroulosalata? In Greek, marouli means lettuce, and salata means salad. This recipe is quick, easy, and most importantly delicious. The key is to have fresh ingredients on hand.

Salad
 1 large head of romaine lettuce; very thinly slicedor two romaine lettuce hearts
 ¼ cup red onion; choppedor scallions if you prefer
 3 tbsp fresh dill; choppedor 1 tsp dried dill
 half of a chopped cucumber; and a few kalamata olives ( both optional)I usually don't put either in, but they both work great in this salad
 ¼ cup extra virgin olive oil
 1 tbsp red wine vinegar
 salt and pepper to taste

To make maroulosalata:

Thinly slice the lettuce cross-wise to make ribbons. Place in a large bowl.

Chop the red onion and the fresh dill. Add to bowl.

Add olive oil, red wine vinegar, salt and pepper.

Toss well to incorporate. Taste, and adjust flavours to your liking.

Serve right away on its own or as a side dish with keftedes or another meat dish.

Maroulosalata can be made a few hours ahead of time and mixed together with the dressing just before serving.

Just chop up the lettuce and herbs and store in an airtight container. Mix the dressing ingredients and store in a glass container if possible. Refrigerate both. Toss them together just before serving.
