Greek Marinated Chicken Thighs

Greek marinated chicken thighs are delicious stuffed in a pita, or served with rice, potatoes, or a greek salad. The marinade comes together in minutes, which leaves you the rest of the day to make a delicious dessert.

 2 lbs chicken thighs; skinless and boneless
 3 tbsp extra virgin olive oil
 1 fresh lemon; juiced
 4 cloves garlic; pressed
 1 tbsp dried oregano
 1 tsp dried thyme
 1 tsp each salt and freshly ground black pepper

To make Greek Marinated Chicken Thighs:

In a large ziploc bag, combine chicken thighs, olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.

Seal and squish the bag to mix and distribute the marinade ingredients throughout the chicken thighs.

Marinate the chicken thighs in the refrigerator for a minimum of two hours, or up to 12 hours. The longer the better, of course.

Turn the bag every once in awhile.

Drain the chicken thighs from the marinade, discarding the marinade.

Preheat the barbeque to medium heat.

Add chicken thighs and cook, until chicken is completely cooked through (165 degrees F), about four minutes on each side.

Serve with tzatziki and any side you prefer (fried or baked potatoes, rice, or salad).

You can also slice and serve in pita bread with tzatziki, tomatoes, and red onions.
If serving with pitas, warm the pitas on the grill for a few seconds per side.
