Fava is a wonderful creamy dip or spread made with yellow split peas (not fava beans) and onions. Santorini is famous for its amazing fava! Serve it with chopped red onion, parsley, olive oil, and lots of bread.

 2 cups yellow split peas (1 lb, 1/2 kilogram, or 500 gram bag)rinsed and drained
 6-7 cups of water
 2 whole onions; roughly chopped
 garlic cloves (1-2 cloves for mild garlic taste; 3-4 for stronger taste)
 1/3 cup olive oil
 juice from one lemon
 salt and pepper
 red onion, parsley, lemon wedges, and olive oilfor options on toppings

To make fava:
Rinse and drain the yellow split peas.

Add the peas, chopped onions, garlic, and 6 cups of water to a large pot and bring to a boil on high heat.

Reduce to a simmer.
Some white foam will surface on the water. Remove the foam with a slotted spoon.

Cover and cook for approximately one hour, stirring occasionally. The peas will be mushy.

Put everything into a blender and puree. I had to do this in two stages.
Or you can use an immersion blender to puree the mixture.

Put the puree back into the pot. If the mixture is too thick, add more water.
Add some salt and pepper to taste (I start with 1 tsp of salt and 1/2 tsp of pepper).

Add the juice of 1 lemon and 1/3 cup of olive oil. Mix thoroughly.

Heat through. Take off heat, and transfer to a serving bowl.

Serve warm or room temperature with fresh bread and a greek salad.

Topping options - finely chopped red onion, chopped parsley, and lemon wedges.
Quite often, you will see capers as a topping as well.
