A Cretan salad is not limited to just a traditional greek salad with barley rusks. Some of the most delicious and innovative salads can be found in Crete — every restaurant we visited had their own special twist.

 5 ½ oz mixed greens (1/2 of a large plastic container)I use baby red and green romaine, but any mixed greens will do
 1 English cucumber; cut into small pieces
 1 large carrot; shredded
 2 cups cabbage; sliced thinlyi use white cabbage, but red will work
 1 ripe tomato; diced into small pieces
 7 dried figs; cut into pieces
 1 cup parsley; chopped finely
 1 cup dill; chopped finely
  cup walnut pieces; toasted
 8 oz feta, goat's cheese, mizithra, or anthotiro; crumbledyou can also combine half feta and half ricotta together
Dressing
 ½ cup extra virgin olive oil
 1 ½ tbsp balsamic vinegar
 1 medium lemon; juiced
 1 tbsp honeyadjust to your taste
 salt and pepper to taste

To make this Cretan salad:

Combine the mixed greens, cucumber, carrot, cabbage, tomato, figs, parsley, dill, and walnuts in a large bowl.

Combine the dressing ingredients.
Taste, and adjust the honey and salt to your personal preference.

Drizzle over the salad, and gently toss.

Arrange the salad onto a large serving platter, and dot with the crumbled cheese.
Serve immediately.
