Fasolada
Fasolada is one of the most popular soups in greek cuisine. Made with white beans and simple ingredients like carrots and celery, this is easy to make but has a surprising depth of flavour.

- To make fasolada: In a big pot, soak a bag of dried navy beans with 1 tsp (5 ml) baking soda in enough water to let beans expand.
- Let soak overnight.
- Drain and rinse the beans.
- Add more water to the pot - enough to cover the beans a good 2-3 inches (5-8 cm).
- Add onions, carrots, celery, and olive oil. Bring to a boil. NO SALT AND NO TOMATO at this point. Never add these two ingredients to the beans until the end, as they will not let the beans cook if you do.
- Once boiling, turn the heat down and gently boil until the beans are tender (approx 2-3 hours).
- At this point you can add the can of tomato paste, salt to taste, and chili flakes if using. Simmer for a few minutes longer. Serve with fresh bread and a greek salad.
