Cretan Salad

A Cretan salad is not limited to just a traditional greek salad with barley rusks. Some of the most delicious and innovative salads can be found in Crete — every restaurant we visited had their own special twist.
Servings: 6

Ingredients
  

  • 5 1/2 oz mixed greens (1/2 of a large plastic container)
  • 1 English cucumber; cut into small pieces
  • 1 large carrot; shredded
  • 2 cup cabbage; sliced thinly
  • 1 ripe tomato; diced into small pieces
  • 7 dried figs; cut into pieces
  • 1 cup parsley; chopped finely
  • 1 cup dill; chopped finely
  • 1/3 cup walnut pieces; toasted
  • 8 oz feta, goat's cheese, mizithra, or anthotiro; crumbled
Dressing
  • 1/2 cup extra virgin olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1 medium lemon; juiced
  • 1 tbsp honey
  • salt and pepper to taste

Method
 

  1. To make this Cretan salad: Combine the mixed greens, cucumber, carrot, cabbage, tomato, figs, parsley, dill, and walnuts in a large bowl.
  2. Combine the dressing ingredients. Taste, and adjust the honey and salt to your personal preference. Drizzle over the salad, and gently toss.
  3. Arrange the salad onto a large serving platter, and dot with the crumbled cheese. Serve immediately.
