Lahanosalata, or cabbage salad, is a simple, delicious, and healthy salad that is very popular in all of Greece, particularly in the Central Macedonian region.

 6 cups cabbage; shreddedyou can use all white or mix half and half with red cabbage
 2 large carrots; grated
  red onion; cut finely
 ½ cup pomegranate seeds (optional)
 ½ cup walnuts; toasted (optional)
Dressing
 2 small lemons; juiced
  cup extra virgin olive oil
 1 tsp regular mustard
 1 tsp honey
 salt and pepper

To make Lahanosalata:

Cut the cabbage into thin strips. Cut the thin strips in half so they are easier to eat.

Add the grated carrots, onion, pomegranate seeds, and toasted walnuts.

Whisk the salad dressing ingredients in a bowl.

Pour over the salad and mix.

Serve with any meat or fish dish, and fresh bread.

This salad can be stored in the refrigerator for up to three days.
