Grilled lamb chops, often referred to as "Paidakia" in Greek cuisine, are a delectable dish featuring succulent lamb chops seasoned with Mediterranean flavors. The dish typically includes a blend of herbs, garlic, olive oil, and lemon juice, creating a harmonious and flavorful profile. Serve grilled lamb chops with your favorite Greek side dishes, such as roasted vegetables, Greek salad, or tzatziki.

 8 lamb rib chops
  cup extra virgin olive oil
 4 cloves garlic, minced
 1 tbsp dried oregano
 1 tsp dried thyme
 1 tsp dried rosemary
 1 tsp salt
 ½ tsp pepper
 1 lemon, juiced
 lemon wedges and fresh oregano for garnish

To make grilled lamb chops:

Prepare the Marinade: In a bowl, whisk together olive oil, minced garlic, dried oregano, thyme, rosemary, salt, pepper, and lemon juice.

Marinate the Lamb Chops: Place the lamb chops in a large baking dish, and pour the marinade all over the lamb. Distribute the marinade with your hands to make sure the meat is completely covered. Cover the dish with plastic wrap and refrigerate for at least two hours, or ideally overnight, allowing the flavors to meld.

Bring to Room Temperature: Take the marinated lamb chops out of the refrigerator and let them come to room temperature for 20-30 minutes.

Preheat the Grill: Preheat your grill to medium-high heat.

Grill the Lamb Chops: Grill the lamb chops for approximately 5-6 minutes on each side, or until they are beautifully seared and reach your desired level of doneness. Rotate the chops during grilling for cross-hatch grill marks.

Garnish: Remove the grilled lamb chops from the grill, garnish with lemon wedges and fresh oregano.

Rest Before Serving: Allow the lamb chops to rest for a few minutes before serving to let the juices redistribute.
