There are many ways to prepare beets, but one of the easiest ways is by roasting them. This roasted greek beet salad brings out the rustic, sweet, and delicious flavor of the beets, and it's a simple and healthy side dish that goes with almost anything.

 6 medium beets
 2 tbsp extra virgin olive oil (for drizzling)
 salt and pepper
Dressing
 ¼ cup extra virgin olive oil
 2 cloves garlic; pressed
 ½ lemon; juiced
 salt and pepper to taste

Preheat oven to 375°F.
Wash beets and cut off the tops and bottoms.
Cut beets in half and toss with olive oil, salt & pepper.

Place beets cut-side down in a baking dish and cover with tin foil.
Roast for one hour or until beets are tender when poked with a fork.
Cool for a few minutes and take the skins off the beets.

Combine beets, extra virgin olive oil, garlic, and lemon juice in a bowl and toss.
Add salt and pepper to taste.

Serve at room temperature, or cold.
If serving cold, cover and refrigerate for several hours.
