Cheese filled flatbread is a delicious bread that combines the fluffiness of bread with the richness of creamy cheese. This recipe uses feta, goat cheese, and ricotta, but feel free to experiment and use whatever cheese(s) you have on hand.

Blending the feta, goat cheese, and ricotta adds a creamy texture and tangy flavor to the soft bread. Whether served as a standalone snack, a side dish, or as part of a meal, this bread is sure to please your family as much as it does mine.

 2 ¼ cups bread flour
 2 cups all purpose flour
 1 ½ tsp instant yeastalso known as Rapid-Rise Yeast or Quick Yeast
 2 tsp sugar
 1 ½ tsp salt
 2 cups lukewarm water
 ¼ cup extra virgin olive oil
Cheese Filling
 3 oz feta
 3 oz goat cheese
 8 oz ricotta
 extra virgin olive oil for blendingabout 1/4 cup
Topping
 2 tbsp butter; melted
 2 tbsp heavy cream
 sesame seedsfor sprinkling

To make Cheese Filled Flatbread:

Add the three cheeses to a food processor and blend until combined. With the machine running, stream in the olive oil until incorporated. Depending on how dry or creamy your feta cheese is, It may take a little more (or less) than 1/4 cup of olive oil to get it to a nice spreadable consistency.

Set the creamed cheese spread aside.

Combine the bread flour, all purpose flour, instant yeast, sugar, and salt into the bowl of a stand mixer fitted with the hook attachment.

Start the mixer on low speed, and mix for 20 seconds to combine the dry ingredients.

Add the lukewarm water and olive oil to the flour mixture. Knead on medium-low speed for eight minutes.

Place the dough in an oiled large bowl. Lightly oil the top of the dough, and cover the bowl with plastic wrap.

Set aside in a warm place to rise until doubled in size, about two hours.

Generously sprinkle some corn flour on the surface of a large round pizza/baking tray or line the tray with parchment paper. Set aside

Pour about one tablespoon of olive oil over your counter surface and spread it around so it covers a 15 inch radius. The olive oil will keep your dough from sticking to the surface.

Transfer the dough from the bowl to the work surface. Press it with your hands/fingers to form a 14 inch circle.

Spread the creamed cheese mixture on top of the dough.

Grab and lift part of the dough edge with your fingers and bring it towards the center, transferring the lifted piece of dough to your other hand to hold. Keep going around the whole edge, bringing all the edges to the center. The cheese mixture should all be covered by dough.

Flatten the gathered center down with your fingers.

Flip the dough over.

Transfer the dough to the baking tray and press down with your fingers to form a large circle, about 14 inches or so.

​Cover with a clean kitchen towel and set aside in a warm place to rise for half an hour.

Preheat the oven to 425F (220 C).

Remove the towel after half an hour. Make some indentations on top of the dough using your fingers, like you would with focaccia bread.

Combine the melted butter and heavy cream in a small bowl.

Brush the mixture over the top of the dough. Make more indentations with your fingers.

Sprinkle some sesame seeds on top.

Bake for 25-30 minutes.
Allow the bread to rest for a few minutes before serving.
