Karpouzopita, which comes from the words 'karpouzi' (watermelon) and 'pita' (pie) is a traditional Greek recipe coming from the island of Milos in the Cyclades. This unique and refreshing treat combines the natural sweetness of watermelon with a simple sesame crust.

 5 cups watermelon, seeded and diced (about 1kg)
 ¾ cup all-purpose flour
 ¾ cup fine semolina
 ½ cup sugar
 ¾ tsp chopped walnuts
 2 tbsp honey
 2 tsp cinnamon
  tsp ground cloves
 ¼ cup olive oil
 ½ cup sesame seeds; divided

To make Karpouzopita:

Preheat the Oven:

Preheat your oven to 350 F (180 C) with the fan setting on. This will ensure even baking.

Prepare the Watermelon:

Place a strainer in a bowl and add the watermelon. Crush the watermelon with your hands until it breaks into pieces. Drink the strained watermelon juice later.

Mix Ingredients Together:

In a large bowl, combine the strained watermelon, flour, semolina, sugar, walnuts, honey, cinnamon, cloves, and olive oil. Mix with your hands until the mixture is well-blended and uniform.

Prepare the Baking Dish:

Liberally brush a 13 x 9 inch (35x25 cm) rectangular baking dish with olive oil or softened butter.

Sprinkle half of the sesame seeds evenly over the surface, ensuring complete coverage.

Assemble the Pie:

Spread the watermelon mixture evenly over the sesame-covered surface of the dish.

Gently press the mixture down with your hands (the thickness of the pie should be approx an inch (2.5 cm).

Sprinkle the remaining sesame seeds on top.

Drizzle lightly with olive oil.

Bake in the preheated oven for 50-60 minutes.

Serve the Watermelon Pie:

Remove the watermelon pie from the oven. Let it cool slightly, then cut into pieces and serve.

This dessert can be eaten warm, or cold.

Serve with Greek yogurt, vanilla ice cream, or a Greek coffee.
