Method
- To a dutch oven, add 2 tbsp of olive oil and heat to medium. Add the sausages and sauté until brown, about 10 - 15 minutes. Remove sausages to a plate, and set aside.
- Pour out most of the sausage fat from the dutch oven. Return to heat. Add 2 tbsp of olive oil, 2 chopped onions, and sauté for 10 - 15 minutes. Add the garlic and cook for another minute. Stir in the tomato paste, chopped peppers, some freshly ground pepper, and the cooking sherry (or red wine). Let this simmer for 5 minutes.
- Add canned tomatoes, sugar, chopped parsley, and chili flakes, Lower heat to low-medium, cover and let it gently boil for an hour or two, stirring occasionally.
- Add the sausages, stir and cover with lid. Cook for another hour. Adjust salt and pepper.
- Serve with orzo, rice, or mashed potatoes.
