Spetsofai is a delicious, spicy greek dish made with sausages, tomatoes, and peppers. It’s a dish that’s native to the region of Thessaly.
Spetsofai is an easy to make dinner, and only uses one pot. Just leave enough time for the flavors to come together.
To a dutch oven, add 2 tbsp of olive oil and heat to medium.
Add the sausages and sauté until brown, about 10 - 15 minutes.
Remove sausages to a plate, and set aside.
Pour out most of the sausage fat from the dutch oven.
Return to heat. Add 2 tbsp of olive oil, 2 chopped onions, and sauté for 10 - 15 minutes.
Add the garlic and cook for another minute.
Stir in the tomato paste, chopped peppers, some freshly ground pepper, and the cooking sherry (or red wine). Let this simmer for 5 minutes.
Add canned tomatoes, sugar, chopped parsley, and chili flakes,
Lower heat to low-medium, cover and let it gently boil for an hour or two, stirring occasionally.
Add the sausages, stir and cover with lid.
Cook for another hour.
Adjust salt and pepper.
Serve with orzo, rice, or mashed potatoes.
