Fasolakia

This fasolakia recipe is a classic Greek green bean recipe, made with fresh green beans, tomatoes, onions, garlic, and olive oil. Simple and oh so good. Don't rush the cooking time; the longer and slower you let the green beans simmer, the more delicious they’ll become. Fasolakia can be a main meal served with feta and fresh bread or a side dish served with fish or meat.

Ingredients
  

  • 1/2 cup extra virgin olive oil
  • 1 large onion
  • 4 cloves garlic; pressed or minced
  • 2 lb fresh green beans; trimmed
  • 4 roma tomatoes
  • 2 tsp sugar
  • 2 tsp oregano
  • chopped fresh parsley (optional)
  • 1 potato; cut into big pieces (optional)
  • salt and pepper to taste

Method
 

  1. Heat olive oil in a large dutch oven or pot on medium heat.
  2. Add chopped onions; cook until tender. Add garlic, cook for one minute.
  3. Add trimmed green beans, chopped tomatoes, sugar, oregano, parsley (if using), salt, and pepper. Mix together.

  4. Reduce heat to low/medium. Simmer until beans are soft (I like to leave them for at least two hours). Stir occasionally. If adding a potato, add in the last hour. I don't add water because the tomatoes and beans produce enough liquid. However, feel free to add a bit if you feel you need to.
  5. Once done, take off the heat until ready to eat. Fasolakia are best served room temperature. Serve with feta cheese and fresh bread as a main meal, or as a side dish alongside any meat dish.
