Method
- Heat olive oil in a large dutch oven or pot on medium heat.
- Add chopped onions; cook until tender. Add garlic, cook for one minute.
- Add trimmed green beans, chopped tomatoes, sugar, oregano, parsley (if using), salt, and pepper. Mix together.

- Reduce heat to low/medium. Simmer until beans are soft (I like to leave them for at least two hours). Stir occasionally. If adding a potato, add in the last hour. I don't add water because the tomatoes and beans produce enough liquid. However, feel free to add a bit if you feel you need to.
- Once done, take off the heat until ready to eat. Fasolakia are best served room temperature. Serve with feta cheese and fresh bread as a main meal, or as a side dish alongside any meat dish.
