This easy pork gyro recipe is made with ground pork instead of cuts of pork. Make it ahead for an easy and delicious weeknight dinner.

 1 large onion; chopped and pureed
 2 lbs ground pork
 4 cloves of garlic
 1 tbsp dried marjoram
 1 tbsp oregano
 2 tsp dried rosemary
 2 tsp salt
 1 tsp pepper
 1 tbsp freshly squeezed lemon juice
 1 tbsp olive oil
 chili flakes (optional)

To make pork gyro:

Preheat oven to 350 degrees.

Chop onion into fairly large pieces and place in a food processor. Pulverize the onion into a creamy consistency. This should only take a few seconds.

Pour onto the centre of a thin dish towel, gather the ends and twist until the onion juice is filtered out.

Place the onion back into the food processor along with all the other ingredients. Mix until very well incorporated, for about 2 minutes.

Firmly press the mixture into a 9 x 5 inch loaf pan (23cm x 13cm).

Bake for 60 minutes or until the internal temperature is 165-170 degrees F.

Drain all the fat, leaving the meat in the loaf pan. Let it cool for 30 minutes. Drain again.

Remove the meat onto a cutting board and slice thinly.

Serve on pita bread with tzatziki, chopped red onions, diced tomatoes, and feta cheese. You can also tuck a few olive oil fried potatoes inside the pita, or serve them on the side.

If serving later in the day or the next day, wrap the whole meat loaf and refrigerate.

When ready to eat, slice the meat thinly and fry for a minute on each side in a bit of olive oil.
