Method
- Preheat oven to 375°F. Wash beets and cut off the tops and bottoms. Cut beets in half and toss with olive oil, salt & pepper.
- Place beets cut-side down in a baking dish and cover with tin foil. Roast for one hour or until beets are tender when poked with a fork. Cool for a few minutes and take the skins off the beets.
- Combine beets, extra virgin olive oil, garlic, and lemon juice in a bowl and toss. Add salt and pepper to taste.
- Serve at room temperature, or cold. If serving cold, cover and refrigerate for several hours.
