Greek Village Salad (Horiatiki)

A greek village salad, or horiatiki salata, is a traditional salad that doesn't have any lettuce in it. It is made with fresh tomatoes, cucumber, green peppers, kalamata olives, red onion, feta, and sometimes a few pepperoncini peppers thrown in for fun.

 1 cucumber, peeled, cut lengthwise, and then sliced into thick half moons
 4 large ripe tomatoes
 1 green pepper, diced into big pieces, or cut into long strips
 1 very small red onion, sliced thinly
  cup kalamata olives, whole (or you can use pitted olives and sliced them in half)
 5 pepperoncini peppers, left whole (optional)
 ¾ cup feta, thickly sliced (or broken into very large chunks)
Dressing
 2 tbsp red wine vinegar (or juice of half a lemon)
 1 ½ tsp dried oregano
 1 clove garlic, pressed (optional)
 salt and pepper to taste
 4 tbsp extra virgin olive oil

To make greek village salad (horiatiki):
In a large bowl, add chopped cucumber, tomatoes, peppers, onion, olives, and pepperoncini peppers if using.

In a small bowl, make the dressing by combining red wine vinegar (or lemon juice), oregano, garlic (if using), salt, and pepper.

Slowly add the olive oil, whisking to combine.

Taste, and add more vinegar or lemon juice if desired.

Adjust the salt, but remember that feta cheese is quite salty, so don't overdo it.

Drizzle dressing over salad, and mix everything together gently.

Place the feta cheese on top.
Drizzle with a bit of olive oil, and sprinkle with oregano.

This salad can be served as a side dish, or as a meal all on its own.
