 1 square or triangle of firm cheese suitable for frying (such as Kasseri, Graviera, or Halloumi)approx 4 - 5 inches in diameter, and 2/3 - 3/4 of an inch thick
 All-purpose flour, for dredging
 Olive oil, for frying
 Freshly squeezed lemon juice
 Chopped fresh herbs, such as parsley or oregano (optional, for garnish)

To make saganaki:

Prepare the Cheese: If you have a large block of cheese, cut a 3/4 inch thick slice. Pat the slice dry with a paper towel to remove excess moisture.

Note: A five inch (12 cm) square will serve 4 people as an appetizer.

Dredge in Flour: Lightly dredge the slice of cheese in all-purpose flour, ensuring both sides are evenly coated. Shake off any excess flour.
